There are a whole series of short video clips on this link - http://www.sportfishingmag.com/video.jsp - from the 'Stateside Sportfishing Magazine that may be of interest. Many feature Florida, but other regions featured cover the Bahamas and Central America.
I'll attach this as a STICKY. Perhaps other forum members can add links as they come to hand.

Some great footage of Spinner Sharks and Dorado taken on the fly on this link - http://www.flyfishingextremes.com/videos.html. Most impressive is one of a 59 second, full blooded run on a shark before the tippet pops!
They do take somewhat of a while to download, but are well worthy waiting for.

Alright Captain Ben does get just as excited but doesn't eat the fish he targets. Here a couple showing him fishing close inshore, in the Gulf of Mexico (Florida) for Goliath Grouper, less PC aka Jewfish. The fish are in the 5 to 600lb range. Um ... will Pouting fishing ever be the same?
http://www.youtube.com/watch?v=Y0ZD85OjjTA I got fed up with the preamble and the sponsors ads. If you 'fast forward' to 14 mins 20 sec he hooks up and, after 3 minutes or so breaks the rod. Any rate it is a big fish.
He does, in that preamble talk about them taking Amberjack. And I can vouch for that! Once, fishing some 45 miles out from Key West in the Gulf, I hooked a 20lb of so - the others we caught, with the exception of one, a 'biggie', were all in that range - AJ in 65' of water on 8lb test. It didn't know it was even hooked.

Well there's nothing about technique here, it's essentially shots of Sailfish following teasers and performing like demented things - their jumps are far from elegant I'm afraid! But there's also some good underwater footage. I'm sure somewhere on the forums I've posted a link to this on line (free) e-magazine - www.catchmagazine.net. It's devoted to fly fishing in both fresh and saltwater and although short on text the quality of photographs and video clips can at times be absolutely stunning.
Just that in the latest one there's a great video of Snook fishing in Mexico - Ascension Bay - and if you're interest some photographs, albeit it's more of a travel log, of Mahseer in India.
