Having tried the only way I know, with pliers at the ready and running the risk of slicing off fingers with sharp knives, I came across this novel method in a smallholding mag : pour boiling water over the doggy and the skin just rubs off ?!
(Please note it is not April first). Anyone tried this one?

Have heard that before, an old timer I was talking too recently actually boiled the whole fish lightly, then skinned and battered the fillets and then recooked by deep frying.
The boiling water thing makes the whole process even more laborious to be honest. Cut around the head, make several slits down the fish and peel it like a banana using pliers or mole grips.
I've seen this done in under a minute, but the best I could manage was about 10 minutes so practice would seem to make perfect. ;)
Or you could just throw them back and call in the fish and chip shop on the way home, thus giving someone else the hassle. :)

Yes its true, cant beat it , no waste lol
have two nails up through a bench and stick the head on the nails. Cut around the skin on the head and pull off in one movement to skin. Makes excellent sandpaper and I think it was this fish skin that was used in 18th centuary as a condom. Ribbed or what.
By the eighteenth century, condoms were still used against syphilis, although Casanova donned condoms made from sheep intestines or fish skin '... to put the fair sex under shelter from all fear'.

Same set up for skate wings.
How do you gut it then? Is it the same as doing a Bass or Mackerel? Only know these 2 because that is all i normally take home to eat.

a good way to skin skate/ray is to loosen a corner of skin and wrap this around a stout/sturdy knife. then turn the knife as if you were opening a sardine tin. the skin should just roll around the knife. once you get started is fairly plain sailing. i've only used this method with skate, but i see no reason why it would'nt work with doggies..

the easiest way is to cut off the fins leaving the pectoral fins slice the belly right up to the chin then remove the guts open it up and you can feel the two bones connecting the fins to just behind the gills cut through the bones and put your foot on the fishes head rip the skin to the center of the back by pulling the fins then grab both fins and pull towards the tail the skin comes off in one go. after a bit of practice it only takes about 20 seconds if that. people i have shown used to throw all there doggies back because they were hassle to skin can now do em faster than filleting a cod

Do you have to do anything with the meat to remove uraic (sp) acid from the flesh? I know with some shark species you have to soak the flesh to remove the urine but am unsure with doggies??

I leave ray wings in a bowl of fresh water in the fridge over night before using them,whether this helps i dont know??? Mother and father have never complained about a bad taste in the skate and chips LOL

Skinning & Eating Dogfish
Hello all!:wiggle:
Well, went out again today and got the usual - a mound of dogfish. Just wondering if anyone has a video of the method of skinning and filleting a lesser spotted dogfish as I wouldn't mind trying one. How does it taste and is it worth the hassle of trying to skin it?
Had three large bites today, my sand eels coming back in with only the center section of the body where the hook was exposed sad I'm currently using size 4/0 hooks on the sand eel so I gather they're far too big. Any ideas which fish could be doing this to the bait? (PLEASE don't say small dogfish!:whistling)

Very subjective. We don't mind them and i'd suggest you try one for yourself.

i do it exactly as in the first video, not tried the 2nd video method yet.
as soon as i catch one i consider big enough to keep (hound or dog) i smack it on the head and immediately push my filled knife in behind the gill rakes and cut through them before hanging it from the tripod to bleed out, leave it like that for about 15 mins max and then skin it and keep the fillet cool,
only when i've had hounds given to me the next morning do they taste of ammonia, i find freezing the fillets for a while cures most of that. it's best cooked with some kind of marinade anyways so even if there is a slight hint of ammonia it won't be noticed.
here's a video i made but, as i was using a blunt fillet knife and the cam angle wasn't great i've not posted it until now, should take about half the time with a good knife!

Take with you several supermarket carrier bags and simply bung the dog fish in individual bags, squeeze out as much air as possible and knot the bags, keep them cool till you get them home .. excluding the air stops the formation of the uric acid .
Take them out the bags & bung them in a bucket of cold water ensure full submersion ..change water every 10 hrs and they will remain eatable for at least 30 hrs, so long as they are kept cool.
I caught 24 keepers not so long ago .......I ended up gutting them , chopping the head and tails off with a very sharp axe, then washing remains off and individually freezing them wrapped in freezer grade clingfilm .
The two I did not freeze were steam cooked insideof a big frying pan with a glass lid ..laid on top of stir fried garden veg with a little white wine..... steamed for 13 minutes ... the skin peels off so peel them just before serving them up ....YUM Yum.
The others have now all been done the same way but were defrosted over night and washed well before steaming ..

hi new to fishing and cought a big dog fish i got it home and didnt know what to do with it so i looked on youtube and watched a video on how to gut and de skin it and it only toke me a few easy minutes and it tasted well nice hope this helps terry

I have just got home with a nice sized Doggie and came on here to see how to skin it. I poured boiling water over it and the skin came off like a dream, about 1 minute. No need for pliers and mole grips...It's just so simple.
Once you end up with the fillet as per video, how much of it is bone?
May give this a go one time seeing as there are a lot of dogfish about!

There is one cartilage bone running down the middle so most of the fillet is flesh, not much bone at all. I prefer to freeze dogfish for a week or two before cooking as I find they never taste of amonia then, if eaten fresh there is always a chance of a taint.

Hello all-doggies are excellent eating-but not starry smoothhounds. I was fishing on Richard Clarke's boat out of Ramsholt, Suffolk and was advised by a retired copper "they fight better than they eat!!" I wish I had listened..
Doggies and Huss are ideal for the table. No bone, just a cartilagenous spine-my dogs love this-as for skinning-look on you-tube, "skinning dogfish/gunny sharks"
