What is the best way to prepare Flounder for cooking. Do you cook them whole or fillet them ?

Never eaten them. Like to grill flatties just rub some olive oil on them with a bit of salt, grill belly side then turn over, once skin side starts spitting and popping take out dash of lemon and enjoy. Should work for flounder I suppose.

Important thing with any Flatties is to cook slowly - otherwise they curl and the only things that get cooked are the bits that are touching the pan. As for Flounders cook whole and if you are not going to eat them straight away put them back as they are not the greatest eating fish except when absolutely fresh;)

i fillet my dabs...

grill them on foil, skin side up. when the skin dries it just pulls off. leave to cook a little longer.
no need to turn over.

the same would work for flounder, plaice etc.

flounder from rivers and estuaries can taste of mud but fish from the open sea are said to taste better.
