hi mate, i got a goodun :D

place it in some foil, with abit of sliced lemon and sea salt + pepper. put it in the oven at 180 for about 20/30 mins. boil some new potatos and make a cream sauce. (melt a TBSP of butter in a pan, when bubbling add a TBSP of flour, whisk. pour in some milk to make it like thick cream, then add more milk till you have a runny single cream type sauce. add some dill, lemon juice)

put bass on a plate and serve with the potatos and pour the sauce all over the dish :D

enjoy :D

btw i just made that up then..... lol

Baked a 3lb bass last night, took the head and tail off and stuffed it with slices of lemon and herbs from the garden drizzled it with olive oil and baked it on a rack in the oven for 30 mins at 200, removed the skin and served with plain boiled new pots, carrots, and haricot verts, spot on.

Enjoy mate

This recipe only uses one dish - saves on washing up.

Put the bass in a baking dish. Pour one tablespoon of olive oil over it. Pour in one glass of white wine. Sprinkle chopped, fresh herbs(fennel is good) and two chopped cloves of garlic. Slice half a pound of onions, half a pound of mushrooms and a pound of spuds. Arrange around the fish. Season with salt and black pepper. Pour in a pint of water. Bake until tender at 200C, 400F, gas mark 7.
