I have caught a few rays now and always put them back as im not to sure if they are good eating or not. I like skate but have only ever bought that from the shop as i have never caught one but i was wondering are all rays classed as skate in a fish mongers?

yes mate they do ray wings are sold as skate wings

Unfortunately rays are sold (as skate) in fishmongers... I think rays are minging and that we should put them ALL back and go and buy some sunstainable Icelandic or farmed cod instead

i find them very tasty when made into a fish pie with mashed potatoe and cheese

They're also lovely fried in butter;) need to be prepared right though leave in the fridge for a couple of days then soak overnight in milk:)

Don't keep any over 7-8lb and try the wings cooked as they do in Brittany in a Black Butter Sauce cut the skinned skate wings in half and poach in a Court Bouillon for 15 minutes,take out of the pan sprinkle with a tablespoon of capers and keep warm,now melt 4 oz of butter in a pan and heat until it browns and foams add a splash of white wine vinegar and some chopped parsley pour over the skate and enjoy!

Alternatively nail the wings to a piece of board, bury in the garden for a few weeks, dig it up, throw the wings away and grill the board under a medium heat and serve up with sauteed potatoes and peas,

why ?????? i have had double figure ray's before and found the meat fills up and makes 3 -4 fish pies .

Put a nail or easier with 2 of them in the fence or shed.Cut the skin away from the bone on the edge you cut away from the body.Hang the wing on the nail end so it hooks behind the bone,get some pliers and pull down in a steady pull,not too bad once you get the hang of it!

I have only eaten them once, and enjoyed it.
When I skinned it I followed instuctions on skinning the wings by taking the skin off with a knife, it took a while (the thorns where a pain).
Is this alot easier? I have skinned doggies and that takes minutes.
