Just purchased a smoker from askari,looks the business but cannot understand the instructions German. Anyone out there used a smoker,or able to translate .

The smoker is not branded, it is a vertical box, just not sure what goes where. I know I can use electric element,not sure about gas ring though,or whether I can use charcoal.

Which model number is it in the Askari Catalogue?

Did you buy it from the German Askari Website or the UK Askari Website? If you bought from the UK, I think it is reasonable for Askari to provide English language instructions.

I do not see any instructions on the Askari Website. If you had the German instructions in Electronic Form (PDF, etc.) then I could use an Electronic Translation programme to make a rough translation and then tidy it up.

I am thinking of buying a smoker from Askari sometime, so am interested in which one you have and your experiences of it (once you get sorted out).

I bought it from the English catalogue, product no 067905.35.376. The instructions were printed on a4 sheet of paper. In your bottom tray have afew containers of *METHS* mibi afew almost deep jam jar lids.Then on your second tray make sure there is about 3 quaters of an inch of sawdust evenly spread in a layer across the bottom of the tray.Then put your fish in,Light your meths and leave it for afew hours.Go back take your fish out.You can then pate your fish eats it liek it is or freeze it for later use!!

Unless you want your lounge to become a fish smelling,manky room with smoke stains or one day soem meths might spill and it'll put your house up in flames!DO NOT have it in your house!!

Looking at the pictures of this Askari Smoker here and on the English and German Askari websites, I would guess that the two top trays are Drip Trays.

The very bottom tray with the 4 legs (i.e. the third tray) is, I think, for the beech or oak chips/dust. Under that you would put some Paste Burners (also in the Askari catalogue) - same as used for Fondue Sets, or alternatively a Gas Burner or the 2kW electric heating element to make the wood chips smoke and raise the temperature in the smoker high enough to cook the fish.

It may be possible to get the chips to burn using a small gas torch to start them off and then allowing the chips to smoulder away themselves for a slow/low temperature smoking.

(I am assuming that there is a gap above the bottom tray to allow for the smoke and heat to pass upwards into the smoking chamber. Otherwise the wood chips will have to be located one level higher up!)

Yeap, I think you are right that the heating element must go on the second tray up to allow the smoke to enter the fish holding area. The air vents at the bottom will be for the gas or paste burners or possibly charcoal if you have some sort of tray - though charcoal may be a little too hot for the smoker.

I would be tempted to clean off any production solvents with white spirit followed by a clean with soap and water. That would get rid of most of the production lubricants. These smokers do not run all that hot, so may not burn off the production lubricants.

(Is this smoker made of galvanised steel as opposed to Stainless Steel?)

The smoker is of galvanised steel, but as you say smoker to be used at lower temperature which should not cause any problems with chemicals seeping from galvanising process.

well i know nothing about smoking fish, but that looks like a real good bit of kit and i quite fanci giving it ago now, how much will one of those set me back?

If anyone is still having problems with the German instructions from Askari, you can talk to Askari Customer Service on the UK Askari Website.

The guy I spoke to is apparently a Chef by training and was extremely helpful about how to prepare the fish, freezing it, killing any worms, etc. He would also know the correct set-up of the smokers.

we got a cobb b-b-q for christmas but cant find anywhere to buy woodchips for smoking fish this time of year - any suggestions where i can get any ??

Big garden centres with bbq stuff tend to have it in stock from year to year. They will be stocking up with all the summer stock soon so there should be no problem, plus in spring and summer you can usually find it in the larger Homebase or B&Q

Try Askari Mail Order (though I think they have a minimum order value). But many of the Mail Order shops will sell wood dust for smoking.
