dont bother just stick them under the grill and the skin will come off easy enough when ready

Better to scrape down the fish then up the fish with a tool which has apointy but blunt cerated edge to it !!

skin a flatfish fillet as you would any other fillet of fish.
As MTM says tho; if you de-scale the fish first you can just keep the skin on and eat that too!!

well i found a recipe for flounders


Hot Flounder





Ingredients

/2 lb. boneless, skinless flounder or whitefish fillets, about 1/2" thick, cut into 4 pieces
Vegetable oil spray
1/2 C chopped onion
1/4 C frozen peas
1/4 C sliced mushrooms
1/4 tsp. bottled minced garlic
1 can (7 1/4 oz.) diced tomatoes
1/2 tsp. drained capers
2 peppercorns
2-3 dashes bottled red hot pepper sauce

Rinse fish and pat dry; set aside. Spray a large skillet with vegetable oil and place over medium heat. Add onion, frozen peas, sliced mushrooms and garlic to hot skillet and cook until tender, about 5 minutes. Set aside half the mixture to serve on the side. Stir remaining ingredients except fish into skillet and bring to a boil. Arrange fish on top and return to a boil. Reduce heat, cover and simmer for 4 to 6 minutes or until fish flakes easily with a fork. Remove peppercorns before serving

dont skin them!! just cook them whole or as a fillet! best way is just under the grill!

If your gonna fry them coated in butter lemon juice etc scale them:) i did it with a dab and its the tastiest fish i've had all year!!

Never tasted Halibut before but i see my local Tesco is now selling frozen fillets of it, but at £5 a pop for smallish fillets. Still must try it someday.

how on earth are you going to catch a HALIBUT from the shore??

the ships go to the deepest, darkest, roughest part of the atlantic to catch them!!

I still wouldn't wanna really pay £5 for 2 tiny fillets.

Wonder how much thon scottish chippy sold their fillets / steaks for when they bought thon big 'un?

would you scale a flounder?ive never done this.personally,i dont like fish,but when the mrs cooks it she dabs it in peppered flour and fries it off?

no need to scale flounder, i just put under the grill or in a frying pan whole. butter.

serve with lemon, and a butter sauce, with spinach.

I HAVE CAUGHT A SMALL HALIBUT FROM A SCOTTISH LOCH ,GRANTED IT WAS ONLY JUST OVER A POUND IN WEIGHT , BUT THEY ARE THERE .

I find that most flatties are "soggy" when eaten fresh, you can grill or fry them as much as you like & they still taste "soggy" (much like cod)!
I find that if you take the heads & tails off, stick them in the freezer if only for a few days, when they defrost all that "sogginess" comes out of the meat when the ice melts, & they fillet a lot easier & cleaner!

Best Way I Think Is Just Fillet Them Pat Driy Put In Lemon Juice Pat Driy Then Dip In Egg And Roll In Bread Crumbs And Deep Fry

Best thing about flatfish, is that they're about the only fish I can fillet and almost guarantee there will be no bones on the end product.
