I was hoping someone could tell me a good way to cook mackerel (i still have loads in my freezer!!!) Thank you.

if its been frozen its good only for bait. mackeral spoils very quickly, it is my favourite eating fish and I could give plenty of suggestions for fresh.

Partly true, it depends how and when it was frozen. A lot of smoked and tinned mackeral you buy in the supermarkets is frozen before it is cooked. If the mackeral is not frozen for long it will cook up like fresh. If it was filleted very fresh and then frozen it can be cooked but some recipes work better than others. I have found that you can hot smoke thawed fillets if they are firm, and spiced dishes like Cajun blackened fish (see http://www.boat-angling.co.uk/9.html ) are OK, but if you want plain grilled macky, fresh is the only way. During the summer I stayed at Penmon and caught and froze loads of mackerel. They were deheaded and gutted and then frozen within a couple of hours of being caught. When I headed back to Manchester they were put in a coolbox and then straight in the freezer at home. I am still eating them and they are still delicious. I defrost them and simply roast them for about 15-20 mins at Gas mark 5/6.
Before doing this I was assured by several locals that this was an OK way to keep them as I did have my doubts that they would keep well.
