Greater weevers are regarded as a nuisance by the Aberystwyth charter fleet as they can be present in large numbers on the bream grounds and also off Aberystwyth where the mackerel-trips drift in the evenings.
But given that you can get double shots of fish over 1.5lbs, a few years ago we tried keeping a few for the pot. Since then I've eaten a few every year.
The trick is, you need one of those pairs of tongs that open when you squeeze them and grasp when you let go. With these you can securely grab the fish and get it onto a bait board to clonk it on the head. With a very sharp knife, make a diagonal cut from behind the gill covers to behind the dorsal and throw the head back over the side - that's the poisonous bit out of the way.
All you need to do then is rinse the fish, wrap in foil with butter and bake for about 20mins until cooked through. Delicious firm flesh, and well worth keeping a couple PROVIDED you have the kit on board to deal with the fish safely.
