Usually throw dogfish and smoothounds back but was just wondering: Can they be smoked (cold or hot?)

    Good question.

I keep hearing how Dogfish are considered almost as vermin and they're over-running the sea a little. Whether that's true or not it would be good to know that what you bring in (Rock salmon as it's sometimes called) can be put to good use rather than thrown back without thinking about it.
List since March 2009:- Mackerel (loads), Doggies (too many), Whiting (10), Common Eel (1), Various Wrasse (6), Pouting (4), Rockling (1), Conger Eel (1), Starry Smoothound (7), Black Bream (1), (Something big, but it got away).

Quite difficult. Hard to light and the Rizlas tend to split.

On the third reply I get this. I somehow expected it sooner, in spite of my care with the wording. Lucky I didn't ask about pipefish.

yep, dogfish are great hot smoked, stay very moist as long as you dont cook for too long, no bones and very sweet meat

Never tried smoking it but have eaten it. A mate of mine Cliff who has a fabulous smoker in his garden smokes much of his catch. on seeing this thread I asked him how he smoked his and he stated he puts slightly less salt in the brine mixture than he would do for cod, mackeral etc. I asked him why and his response is that he was shown how to smoke by his father and that's what his father told him!

    Best

any fool knows that the blue papers packs are not strong enough for smoothound or dogfish.
green papers doubled up are the way forward

Interesting, regarding smoothound never kept one but may give it a go. Problem is an 8lb + fish would be far too much meat. Guess a little 4lb would be perfect
