Fishings a little slack at the moment but from the shore you could expect to catch:
Bass (try any beach)
Pollack (been very slow of late try where theres a good rip running might improve your chances?)
Lesser Spotted Doggies(you probably don't want these)
Bull Huss (The record has just been broken twice in the past month on the boats)
Mackeral
Wrasse (everywhere!)
Mullet
Sole
Bream(There is news that they have arrived but not in great numbers yet!)
If your fishing off the boat then:
Bass
Cod (wrecks)
Pollack
Turbot (good size catches being caught off the banks around Sark I'm told)
Brill
Bull Huss
Gurnards
Conger
Mackeral
John Dory
Ling (wrecks)
Enjoy your time over the weathers great but the tides not huge. If you need help picking a mark visit fishing-guernsey.co.uk its got a good selection of marks you can try with pictures to make identification easy!
From shore
I recommend for small bass and perhaps a sole to go to Lancress/Pembroke. LSD and perhaps bream to try the Lace.
My favourite spot is Soldiers Bay but I haven't fished their for a year now and usually comes into its best later in the year. There are loads more spots to explore though.
For boat fishing try contacting Toerag (on this forum and fish gsy) who should be able to point you in the right direction."Even a fish wouldn't get in trouble if it kept its mouth shut!"

There are quite a few fish about at the moment, Bass off the shore to West coast marks after dark (which is late this time of year...), Loads of Mullet about as well as what Guern211 said.
Direct link for the Mark details on Guernsey is http://www.fishing-guernsey.co.uk/wheretofish.html you can either click on the link to a map in the text which runs a flash presentation with dots where the marks are that you can click on for data or fill out the form at the bottom to find a mark for specific tides/species or whatever.
Cheers
