Cooking Cockles
Dear all,
Not so much as in cooking fish but on Saturday night I had freshly collected cockles boiled until opened then marinated in a garlic and white wine sauce absolulty beautiful. Especially when I had spent 2 hours collecting them

You know what? I'd climb over a Salmon prepared by Gordon Ramsey for a bowlful of fresh cockles in their shells

What I do is leave them in a bucket of seawater overnight so they purge any sand in them, rinse and scrub thoroughly to get rid of any sand on the outside, put them in a covered saucepan with just the rinsing water and when they've opened eat with just a splash of malt vinegar and some brown bread and butter - truely - if there are angels - this is what they'd eat

well you can come and get them out of my crab tyres.
over the years the bay my tyres are in, the population has got bigger and bigger and with only the odd person collecting them they are huge. when theres a bit of sea on some get wased out and into my tyres. you can get a bucket full in half an hour with your bare hands.
