If you ever get the chance, if at a fishing port such as looe where i live, have a look in the processing units where they are filleting the fish.
Dont blink tho, or you'll miss it. The pro filleters are amaixing to watch.
Flatfish are one of the easiest fish to fillet as there are no ribcage bones like on nermal fish. Start at the spine and work outwards. The longer i take, the worse an effort it turns out to be. If i'm in a hurry, and rush it, it normally turns out much better!!
Have a look on the seafish website. Try www.seafish.co.uk loads of advice and recipes.
SSA lure passing by at a steady course and speed might well tempt the fish; but if you give them something to chase - they cannot help themselves.....

Cheers all - will have a blast. Proabably end up down the chip shop a couple of times before I get it right.
Superged - great set of machines, but I'm not sure they have the capacity to cope with the huge numbers of fish I catch.

with the larger cod and bass, i find its best to cut through the fish in steaks. leaving the central spine in, when eating the flesh just pulls away leaving it nice and moist, you need a heavy sharp knife and a hacksaw, absolutly no waste, and if you cut thick steaks, these are better to use in casseroles/curries etc.
