Lemon baked dogfish
450g dogfish fillets
4 tsp lemon juice
1 tbsp butter
1 tsp lemon rind
1 pinch of rosemary
salt
black pepper
Preheat oven to 180°C: 350°F: Gas 4.
Divide fish into serving sized pieces. Line a baking tin with foil and add fish. Mix butter, lemon juice, grated lemon rind, rosemary, salt, and pepper. Pour over fish. Cover with foil. Bake for 25 minutes. Serve with new potatoes. Wash it down with a nice dry white wine. (Home-made elderflower wine goes well.)
