Garfish
Garfish are a very sweet tasting fish and not everyones cup of tea due to the colour of the bones and if not cooked properly they can taste awfull.
Here is a recipe that I came up with one day when experimenting.
Fillet your garfish, and make sure that it is well washed.
Score the fillets all the way down making diamond shapes.
Gently heat some butter in a frying pan and add a couple of bay leaves and a good squeeze of lemon juice.
Rub rock salt into the skin so that it gets into the scoring that you have done.
Turn the heat of the pan up and place your garfish in skin side down.
When the skin has browned turn the fish over and cook briefly on the flesh side.
Serve with salad.

yep that is a great way of doing them.
i just cut the head off, rub with sea salt, lemon and garlic, oil. then bake in the oven for 10/15 mins.
serve with salad and crusty bread
