    fishfingers,

    any fish that i have to kill due to injury etc(smallish)are normally steamed and turned into fishballs or cakes.obviously mashed potato is a major ingrediant.
    however,ive been wanting to make fishfingers with as close to 100% fish as poss.
    what binding agent would help with this.

    to make a 'proper fish finger you ned a goodquality thick boned fillet. cut into strips dip in beaten egg and coat in bread crumbs. ready to fry mate can't be easier

    Whiting, Dog fish- Lesser, mackie, trigger fish, pouting, poor cod, black bream, conger, sand smelt, bass, bull huss,mullet.

    Indeed Robski. If you're having to mush together various bits and bobs, rather than use a more solid fillet, or are melding types of meat or 'loose' meat such as crabmeat, a 'carrier' such as mashed potato acts as the binder, no way round it really. Egg alone with moist meat would be too runny.

    i make my kids fish fingers with any fish, yes even bass and sole fillets that were left over (sorry smoothy... dont hurt me aagain!).

    take the fillet, roll in flour to dry, dip in beaten egg yoljk, then roll in breadcrumbs.

    cook til golden, about 3-5 mins in hot shallow oil !
