Roll Mops anyone?
My Gran use to call them Roll Mops,anyone else cooked herring like this.
12 Mackerel or herring fillets
2 Chopped onions
Whole black peppercorns
Whole cloves
1 pint of Guinness
half pint of Brown vinegar
Fresh bay leaf
With each fillet,skin side down,place onion,cloves,pepper and a bay leaf on it.Roll it up and place in Pyrex dish.When dish is full pour pint of Guinness over then half pint brown vinegar.Stick it in the oven for an hour 200d.
When its done, let cool and then stick it in the fridge and chill it.
When its chilled EAT!

roll mops were actually raw herrings and soaked in vinegar and onions. this method would be called baked herring/mackerel.
i do mackerel similar but a simpler method.
fillet and bone the fillets.
lots of ground pepper on the flesh side then roll them starting with the tail end with skin out and hold together with a cocktail stick.
i usually fit around 16 fillets in a deep tray. cover them to half way with 50/50 vinegar and water. cover with tin foil and bake.
as soon as they are done, drain liquid off.
they can be eaten while stil warm or as i prefer them cold.
the vinegar takes away a lot of the oil leaving them nice and dry. my mate eats them like strawberry,s

I make my own similar to as mentioned before.
My mate has a bar and takes a few jars a week from me, there is no better food with a beer!Resident in Tenerifé,Canary Islands
