I cut the head and tail off, thread it on the hook [when its defrosted] like a worm tail first, and use a bit of elasticated thread to secure it.I always use a pennel rig with sandeels and hook the top hook into the tail.

All according to whats happening but mostly I feed the hook through the mouth and up the body as if it was a worm. If no action then I'll top and tail to get more of a scent trail, but still feed it up the hook.
Men are like fish, we only get into trouble when we open our mouth.

Depends on what you want to catch and how you want to fish.
Pennel rigged and secured with bait elastic for bottom fishing, or pass the hook through the mouth, pull the line through, and pass the hook through the skin on the back about half way along so the hook is sticking up and secure with elastic for spinning or float fishing.
Hard to explain really isn't it!
Hope that made sense.

If it looks like a duck, walks like a duck, swims like a duck and goes 'Quack' it's probably a duck. Or if you're into conspiracy theories it's a chicken.

IMO don't take the head off! Fish often take head first so cut off the tail to avoid the eel spinning then thread the hook (5/0) inside the eel and then out throught the belly. When the fish takes head first the hook is now correctly placed to hook the fish.
Take the line and wind it round the eel and shank ofthe hook in 2 or 3 granny knots if you are casting any further than a light chuck.

When spinning I always thread through the mouth and down through the body coming out in such a way that the eye of the hook is just inside the eels mouth. I then secure with 2 half hitches. Never comes off this way even when belting it out.
When bottom fishing either method explained above will do.Sea Anglers' Conservation Network (SACN) 0589
