Oman
Um....couldn't find any reference to Oman on the Anglers World site but I recall several of our Club members (SCBI) have fished there in the past and caught reasonable Jacks and Tuna. The fishing though was from small open commercial boats, nothing grand. And certainly during 'our' summer months both air and water temperatures can be particularly high!
In terms of other 'fun' destinations though 'the world', dependent on how much you want to spend, can be 'your oyster'. But are you looking for a dedicated fishing holiday or a few days to 'tack' on the end of a more leisurely family holiday? And what do you want to catch?
As a starting point, if you're looking for possible alternatives to Oman, try looking through the range of previous posts on the International forum. They cover a whole range of venues.
Costs of flights can be a significant factor in any overseas holiday and you'll find, especially during school holidays, these 'climb'! To some extent though they can be offset by going on a package. As an example during August I went to the Pacific coast of Costa Rica and paid nearly £1000 for just a return scheduled air flight. Other Brits I met there though had ended up paying just £800 for a 10 day inclusive holiday package - flights and 4 star hotel on a half board basis.

Some suggestions
In terms of variety that will easily fit into your budget the places I guess I would start would be:
- the Pacific coast of Mexico. Try looking initially through reports and holiday updates on places like Puerto Vallata, Cabo san Lucas and East Cape in the Sea of Cortez. All, inshore, will offer a variety of Jacks (including Roosterfish) and Snapper from pangas. Offshore, for your 'something big', you'd be able to, based on season, target Marlin, Sailfish and Yellowfin Tuna. This can be either from ‘fully fledged’ game boats or ‘super’ pangas – I guess it’s balancing cost against overall comfort. This thread - http://www.worldseafishing.com/forum...ad.php?t=55438 - will give you a starting point in terms of seasons and archived catch reports.
- The Florida Keys. (As with Mexico costs are dollar based and current exchange rates make these attractive propositions.) There I try basing myself at, or close to, places like Islamorada, Marathon or Key West. Inshore you can either go out on ‘head boats’ (20 to 70 plus anglers at a time!) and fish the reefs or hire a guide to light tackle fish the Flats (shallow water) for species like Bonefish, Permit and Tarpon. And, certainly after a day or two out with a guide, you may want to consider hiring a small boat. It keeps down the costs.
Offshore the marks called the ‘Humps’, accessible from Islamorada or Marathon, are great to try for 80lb plus Amberjack and the Sharks – especially Hammerheads, Bull and Tiger Sharks. Sailfish, and other species, are also around, again based on season. There you’d use a conventional game boat. However at Key West I’ve always had much more fun taking out a 26’ offshore skiff (maximum of three anglers) into the Gulf of Mexico and light tackle fishing for a whole variety of species. We’ve even had Sharks – Lemons and Black Tips – and Blackfin Tuna on spin gear or fly rods.
- Montauk on Long Island, New York. Offshore you can again target Sharks, particularly (big) Blues and Mako. But Threshers, Porbeagles and the occasional Tiger and, very rarely, Great Whites show up. Inshore, again there’re ‘head boats’ or inshore skiffs, and the main species you’d target are Striped Bass or Bluefish. You can as well target them surf casting with bait or big plugs.
Then there’s Kenya with its reef fishing for Giant Trevally and, on the deeper reefs, Snapper and Grouper. Offshore, again based on season, there’re amongst other species Marlin, Sailfish and Yellowfin Tuna. Also, over the last few years, anglers are targeting the big Tiger Sharks.
Finally, whilst not necessarily, a place I’d suggest for inshore fishing you may want to consider the Cape Verde Islands for its Blue Marlin especially. In season, and you’ll see from earlier reports, you can almost (well almost) guarantee catching a Marlin.
So it’s a start, but by no means comprehensive. (Try scanning through the site for earlier reports if any interest you.) But you’ll find that for many of those you can either get packages to or cheap air flights - helps to keep down costs. What I’ve suggested though are ones where you’d tend to put the package together yourself. If you don’t feel comfortable doing that though there are, as you earlier suggested, companies that specialise in angling holidays overseas.

These two threads from the Caranx forum might also give you an indication of the fishing potential of Oman - http://www.caranx.net/forums/index.php?showtopic=3105 and http://www.caranx.net/forums/index.php?showtopic=2987.
