A link came up the other day for the Flip Kat folding kayak/catarmaran, a really interesting take on a theme and having watched rhe video a couple of times, I would love one for freshwater and estuary fishing, not so sure about open sea however but at $4500 in the US, it is not something I have to consider at the moment but I do see the potential of this craft for many applications including storage at home.

Oh my God, what a contraption for a lot of money. It's a toy for ponds. An estuary can be rough with strong tides. I would worry about that thing in a swimming pool. :)
Who knows what it is like on the water, could be utter garbage but perhaps not. It is bloody heavy on land getting it in and out of the car, in fact slightly heavier than a 15hp 4 stroke outboard so a handful for sure but we cannot really pass judgement without some experience. In the US, there is a culture to produce safe products because the ease of taking people / companies to court can be very expensive and with that in mind, I suspect this craft is a lot safer than you think, you may be right but I doubt it.
As they gather a larger market share which I think they will, we will see how well they are accepted in the market. I do like the concept for some of my fishing but A) I can't afford one and B) they are only available in the States.
I take on board your comment about estuary water but in my case it is the Humber where we rarely even get white horses and as for the tidal flow, I have fished my region countless times in various boats and the various kayaks over the yeats, plus, there would be an electric outboard as well as pedal drive.

Propulsion aside, something that flips open and locks in place is not something that should be on anything other than FLAT water.
I would need to see how it reacts on the water if one or more of the flexible elements fails.

Propulsion looks good Unless it fails and then you are going to need to lock/retract the rudder and paddle??? That paddle will have to be some size too with the height of the seat to the water.
