I'd probably look at the Paradisus Rio de Oro on Playa Esmerelda. There's a mixture of beach, reef and low cliffs around the area, so it's probably worth exploring. The national park next door means most of the area immediately east of it will be wild. Oh, and there's a brackish lagoon between it and the Sol which looks tarpon-y; and Bahia Naranja looks very snook-y too. Sort of place that might be fun to explore - but the direct beachfront in front of the hotel ain't going to be your best bet. https://www.melia.com/en/hotels/cuba/holguin/paradisus-rio-de-oro-resort-and-spa/index.html
