Apologies for jacking this thread, but I have very rarely used peeler and have always wondered why people "gill" their crabs.
What difference does it make? Are fish smarter than we give them credit for and gill the crabs before eating them, or do they avoid them unless they've been lovingly prepared by anglers?
Sorry again for the interruption, but I am genuinely curious.

Ah right get ya, more a case of extending storage time than making a palatable bait.
