Nice video!
Next time , if you go in vertical alongside the boney/spiny ridge , and then twist your wrist to get under the fillet, you will save that bit of flesh you always lose when cutting at 45' due to the ridge .

Or, if you aren't confident, use a good pair of scissors and take the back off ,use the spines as a guide and work around the back, that then allows you a straight horizontal cut to fillet it conventionally:)
