Rainbow trout as bait?

I am watching TA fishing, he is catching congers and using rainbow trout as bait.
So would I catch from the beach with rainbow trout as bait, or brown trout for that matter?

The stocked trout are very fatty due to all the pellets. So the oil will be leaching out well in the water.
He (Graham) also uses these for the base of his chum mixes in lots of videos.

Whole rainbow trout are often used for common skate. I've used strips of rainbow trout when mackerel have been scarce and I've caught thornbacks and dogfish on it. The skin is very tough and the bait lasts well on the hook. A friend of mine who used to work in a processing plant caught thornbacks on chunks of farmed salmon.
