Gilthead Bream

Mmmm. I tried some fresh Gilthead Bream for the first time last night. As nice, if not nicer than Black Bream in my opinion. Thats another one above Bass on my all time list. Tried some Whiting the other day as well, fresh again, but it was a bit bland, and almost soapy tasting.

I simply pan fry fillets of my fish with nothing apart from some salt and pepper. I like to taste the actual fish rather than smother it in something overpowering. I remember giving a good sized Red Mullet to a friend to cook for when I came round the next day. It was put into a Thai Curry...sacrilege!

All the breams are afavourite of mine as I love all fish. I wouldn't be surprised you favour it above bass, I favour bream, squid, turbot, brill, dover sole, plaice, mackerel, red mullet, gurnard and about half a dozen others above bass. Most surprising of all is that my favourites were all beaten by a new entry a few weeks ago although it is a fresh water fish. For the those of you that go to the Loire Valley, try Sandre and beurre blanc. For those not in the know, Sandre is Zander and has the most unbelievable taste when simply pan fried and served were the beurre blanc sauce! It simply blew me away! :victory:

we brits seem to have an aversion to eating freshwater fish. i've had both pike and perch, and would recommend them highly, my mum reckons catfish is real tasty. love gilthead though, such a lovely buttery taste, in fact guess whats for tea, can't wait.:)

I have some Halibut in the fridge I should be eating (tried it before, its average), but I can hear the pub calling, and I dont cook well at 1am.

I'd like to try more freshwater fish, have only sampled Trout (stockies rather than wild) and Pike. The problem is where to get it from down here.

to be honest i think if you eat any other freshwater fish other than trout and salmon (half fresh water i guess) its sacrilege in my eyes, ive caught a zander and many many pike and i wouldnt dare kill them, we already have enough poles doing that


and ive never tasted bream, its a delicacy i know but there are no bream around where i fish :( and the holidays i take down to devon ive only caught miniture undersize black bream

It is only sacrilege when the stocks are limited like here in the UK. In Europe/Scandinavia/USA etc freshwater fish is what they have most of so they are caught and eaten, no problem. The Poles and other immigrants are just doing what they are used to doing back home, they need educating about sustainability thats all. We are now farming freshwater fish in the UK - carp and baramundi.

there are now certain waterways were you must kill all zander caught. they are not a native species, and are decimating fish stocks along with cormarants. so if they gotta be killed, i for one, would be eating them. (not a cormarant, couldn't even begin to think how nasty that would taste.)
There used to be a fair few round here that insisted you kill any jacks caught too-for the same reason. They were destroying the stocked fish.
